A persistent popular theory holds that the dietary laws of the Torah (kashrut) – codified primarily in Leviticus 11 and Deuteronomy 14, with supporting passages throughout the Pentateuch – were, at least in part, practical public-health measures. The claim is that ancient Israelites, whether through empirical observation or divine guidance, encoded food-safety wisdom into religious law: avoid the foods most likely to make you sick.
This idea gained traction in the 19th century when the link between trichinosis and undercooked pork was established, and has since been extended to shellfish toxins, blood-borne pathogens, carrion, and more.
The question is not whether these foods can be dangerous – many plainly can – but whether food safety was the primary driver of the prohibitions, a contributing factor among several, or largely a modern rationalization projected backward.
The pig is the paradigmatic forbidden animal: it has a cloven hoof but does not chew the cud (Lev. 11:7; Deut. 14:8). Pork carries well-documented risks:

“Swarming things” – insects, rodents, reptiles that move along the ground (Lev. 11:29-31, 41-43) – are broadly prohibited. Many of these are disease vectors or carriers of parasites.
Archaeological evidence confirms that foodborne and waterborne illness was a significant problem in the ancient Near East:
Iron Age Jerusalem (7th-6th century BCE): Excavations of elite toilets at two separate residences (including the royal estate at Armon Hanatziv) found the oldest known evidence of Giardia duodenalis – a parasite causing severe dysentery, cramps, and potentially death. The researchers (led by Dafna Langgut, Tel Aviv University) concluded the parasite was likely endemic to Jerusalem and widespread in the region. Notably, these were elite residences – if the wealthy suffered from parasitic disease, the general population was certainly worse off.
Ancient Egypt: Marc Ruffer’s pioneering 1910 study found calcified eggs of Schistosoma haematobium (urinary blood fluke) in 20th Dynasty Egyptian mummies (c. 1000 BCE). Egypt was considered disease-ridden by neighboring cultures, including the Israelites and the Hittites. Deuteronomy 7:15 itself references “the diseases of Egypt” as something God would spare Israel from.
Crusader Period Acre: Analysis of cesspits from the Order of St. John found eggs of fish tapeworm, Taenia tapeworm, roundworm, and whipworm – confirming the persistence of these parasites in the region across millennia.

Archaeological excavations of Iron Age I sites in Israel have shown a striking pattern: while pigs were a popular part of the Philistine diet, they were entirely absent from the herd-based economy of the Israelites. This absence predates the written codification of the dietary laws, suggesting the avoidance was already established practice that was later formalized in the legal codes.
There is a historical pattern – most famously during the Black Death (14th century CE) – of Jewish communities suffering lower mortality rates than their gentile neighbors. Multiple factors likely contributed: ritual handwashing before meals, avoidance of carrion, the salting and preparation process for meat, separation of food types, and general emphasis on cleanliness in food handling. While this evidence is much later than the biblical period, it suggests the cumulative effect of kashrut observance did confer measurable health advantages.
Marvin Harris (discussed further below) emphasized the ecological context: the ancient Near East was hot, arid, and increasingly deforested. Pigs require water for thermoregulation (they cannot sweat), compete with humans for grain and food scraps, and provide nothing beyond meat – unlike cattle (labor, milk, leather), sheep (wool, milk), and goats (milk, terrain adaptability). In this environment, pig husbandry was ecologically maladaptive, which Harris argued was the real driver behind the prohibition.
The most influential anthropological alternative comes from Mary Douglas, whose Purity and Danger: An Analysis of Concepts of Pollution and Taboo was named one of the 100 most influential non-fiction books since 1945 by the Times Literary Supplement.
Core argument: Prohibited animals are those that violate the classificatory order of creation. “Dirt” in any culture is “matter out of place” – things that confuse categories threaten cosmic and social order.

Contributing factor: Symbolic classification. Douglas’s taxonomic argument (even in its retracted original form) captures something real about how the system is organized. The rules have an internal logic based on categorical order, not a medical logic based on pathogen risk.
Contributing factor: Ecological rationality. Harris’s materialist argument has force specifically for the pig prohibition – pigs were genuinely poor ecological fits for Israelite pastoralism. This may explain why the pig rather than some other animal became the paradigmatic unclean beast.
Contributing factor: Empirical food-safety observation. Ancient peoples were not stupid. They observed that certain foods made people sick more often. These observations likely reinforced existing prohibitions and may have influenced which animals were placed in which categories. The blood prohibition, the carrion prohibition, and the shellfish prohibition all map so cleanly onto food-safety concerns that complete coincidence seems unlikely.
Post-hoc rationalization: A significant component. The 19th-century discovery of trichinosis provided a satisfying “scientific” explanation that appealed to modernizers who wanted to show that ancient religion was secretly rational. This impulse – to validate faith through science – is understandable but can distort the evidence.
Kashrut is not a primitive CDC guidelines document. It is a sophisticated religio-legal system with theological, symbolic, ecological, social, and practical dimensions. The food-safety hypothesis captures a real but partial truth: some of the prohibited foods are genuinely more dangerous, and the preparation requirements (blood drainage, organ inspection, slaughter method) confer measurable safety benefits. But the system as a whole is organized around holiness and classification, not around pathogen risk, and the food-safety reading cannot explain the full shape of the prohibitions.
The most intellectually honest position is that food-safety considerations were likely one input among several – an empirical observation that resonated with and reinforced a system primarily driven by theology, identity, and symbolic order. The ancient Israelites were practical people living in a dangerous food environment, and their religious laws were not formulated in ignorance of that environment. But they were formulated as religious laws, not as health codes, and reducing them to hygiene advice misses most of what they were actually doing.

The laws with the strongest food-safety mapping are the preparation and handling rules: drain blood, don’t eat carrion, don’t eat torn animals, slaughter properly, inspect organs. These are essentially a food-handling protocol.
The laws with moderate mapping are the categorical prohibitions on high-risk food types: pork, shellfish, scavenger birds.
